Tara's Swiss Chard Soup
1 med onion
5 garlic cloves
olive oil
butter
yellow curry powder
2 large bunches swiss chard
2 med yukon gold potatoes
1 large can or box of vegetable or chicken stock
salt and pepper to taste
Using soup pot or dutch oven,
dice onion and garlic and sautee in oil and butter until onion is clear
add curry powder to taste - some like a lot, some, not so much
wash and rough chop the chard and add to the pot, it will cook down quickly, let it simmer in pot to soak up spices and juices - 10 minutes?
cut potatoes into one inch cubes and add to pot
add stock, lightly salt and pepper (stock usually has ample salt in it)
simmer -- never boil -- soup until potatoes are soft.
take off the stove and blend ingredients either with a hand blender wand (best method) or transfer bits to blender or food processor (messy, icky, and time consuming). Blend well. You may add a bit of milk or cream if you like.
Sometimes I add cooked bacon, chopped up, as a garnish. You could add soy bacon bits.
"hey, it worked" - pj
hey pj,
i remember seeing this picture when we all used to blog a lot on the sb site--at least i think it's the same one. always loved this pic--so angelic.
this recipe sounds delish, especially now that the temps are dropping here.
so, there was a time that it didn't snow in vancouver? i'm glad you now have the proper equipment to clean up after the snow.
i thought you meant snowpeas you eat. do you mean flowers called snowpeas? tomatoes are good when they're fresh. i live in an apartment, so no garden here. sometimes someone who has a garden will bring me tomatoes and other veggies. yummy!
even though that photo is an earlier one, it's a good one. nothing wrong with looking at photos of us when we were younger, and yet, we embrace ourselves in our wisdom and beauty as we age gracefully. (sounded good anyway!)
i hope the temps even out for your head's sake. i've turned on my heat, but i haven't turned it up yet. the winds are blowing so hard here. some gusts up to 43 mph have been reported.
thanx, i'll ask leslie about commonwealth day.
take care of youself,
sylvia
hey Princess,
yep it is the same "angelic" pose, where i feel like i am On Top of The World!!!
yep, Vancouver used to be very "temperate" not too cold in winter, just very rainy, and not so very hot in summer like it now is, also rainy with some higher temperatures and sunny days...now it is a mess! - way way way too hot in summer these last 10 years or so; and the winters, brrrrr, except the last 2 years have been quite acceptable.
For this summer i am praying for nice, even, warmish days with sunshine and the the merest whisper of a cooling breeze, then at night it can rain, as we need the moisture. I'm putting my order in early so i hope it is met! lol
it has warmed up a bit now that the rain has started...and i am more comfortable, thanks, the headache has gone and i am so relieved. i live in an apartment but i have a balcony onto which the afternoon sun shines...so i know the toms. will do well; i have never planted veggies before but i want to try something new.
"...embracing ourselves..." yes, your words, very wise, thanks, i will remember that.
well, cheers for now,
pj
A wild woman with wings...hmmmm!
